Today, that same philosophy is being applied to the bar. As a growing movement in luxury hospitality sees hotels move beyond curated cocktail programs to create their own labeled spirits, Cashel Palace’s new bespoke whiskey tells the story of County Tipperary’s history and agricultural heritage.
Building on the successful debut of the 1732 Cashel Palace Gin, this second collaboration with Tipperary Boutique Distillery represents a new era of the hotel’s cultural identity. By developing bespoke spirits, the palace offers guests a more immersive connection to the region through taste, designed to pair perfectly with the hotel’s Michelin-starred excellence.
A House Whiskey, Born of Tipperary
The Cashel Palace Three Year Old Irish Pot Still-Whiskey is a limited Irish whiskey created through an exceptional collaboration with two names that define the country:
Coolmore Farms — homegrown Tipperary barley, grown and harvested in the lands that surround the Rock of Cashel and sent to…
Tipperary Boutique Distillery — artisans in modern Irish distilling, who have distilled and aged the whiskey under the stewardship of owner Jennifer Nickerson.
Coolmore Farms’ involvement brings a rare agricultural provenance to the whiskey, with barley grown on land internationally renowned for its richness and care. Tipperary Boutique Distillery, meanwhile, brings distilling expertise rooted in tradition, patience and precision. Cashel Palace Hotel completes the partnership, curating the vision and offering a setting where heritage, refinement and modern Irish luxury coexist.

Matured in first-fill Oloroso sherry casks, the whiskey presents a deep amber hue. The notes reveal rich aromas of dried fruit, dark chocolate, figs, toffee and warm spice — a spirit designed not only for tasting, but for remembering.
Cashel Palace 1732 Gin
The Cashel Palace is a luxury hotel with gardens overlooked by the Rock of Cashel in Tipperary. Built in 1732 for the archbishop, it is a Grade I Listed building and was one of the grandest examples of Palladian architecture at the time. The hotel strives to bring their locally sourced ethos across all details, including the drinks served. Teaming up with the neighbouring Tipperary Boutique Distillery, they developed a gin using local ingredients subtly infused with mulwberries, a nod to the mulberry trees planted in the garden in 1702.
The design takes its cues from the library and the literary heritage of the location. Religious iconography connects back to the original residents, and the typeface designed in the 1700s, helped further root the aesthetic to that era.
